Ingredients
1 pound fresh ripe figs, washed, stemmed
1 cup sugar
Directions
In a medium saucepan, mix figs and sugar together and cook on low heat, uncovered, about 30 minutes.

If processing, pour hot preserves mixture into a hot, sterile 1-quart or 2 (1-pint) glass canning jars, filling jar to within 1/8-inch from top; wipe rim and seal jar with lid. Put jar in water-bath canner or on rack set in a deep kettle and cover with hot water by 1 to 2 inches. Bring to a gentle simmer (180 to 185 degrees), and process, covered, 5 minutes. Transfer jar to a rack using tongs and let cool completely. Store in a cool, dark place.

:)Thanks a bunch and mean a bunch, when out early this morning and got another gallon, I think I am going to be busy.
I might use sugar substute, I am a diabetic and these thing are so sweet right off the tree, wow. Interesting this tree two year ago got hit right in the middle with a micro burst (tornado)ever limb was shread beyoud repair, had to cut it down to the ground.

Found this linky that was super informative. Especially the option of just adding sweetner when things are served.

Read another article that recommended Splenda as a sugar sub for canning, but recommendations were to use about half the amount of Splenda as sugar.

smile Hehehe, your right, lucky me, I looked at the link and wow it told me a lot. I've got to get some canning jars for I have got another gallon of them to work on, that is if I don't eat them all before I do. LOL LOL
